Jellied salad 

Pkg. lime jello
1 tsp. salt
2 tablespoons vinegar
1 tsp. grated onion or chopped green onion ( I use green)
1 cup sour cream or low fat cream cheese
1/2 cup mayo
2 cups diced cucumber
1/2 tsp. horseradish.

 
Peel and chop cucumber very fine and then put in colander and let drain well, squeezing out excess juice. 
Dissolve jello in 1 cup boiling water. 
Add vinegar and onion and chill until partially set. 
Blend in remaining ingrediants (easier to do if you use sour cream rather than cream cheese), fold in cucumber and chill until firm.
