Red Curry

1/4 cup vegetable oil
1 cup chopped onions
2 tbsp grated ginger
1 tbsp chopped garlic
1 tsp cumin
1 tsp tumeric
1 tsp coriander
1/2 tsp ground red pepper
1 tsp salt
1/2 tsp pepper
1-2 tsp black mustard seeds
2 tbsp jaggery or demerara sugar
1 tbsp curry powder
1/4 cup fresh lemon juice
1/3 cup cider vinegar
2 cans stewed tomatoes

1. heat oil and very slowly cook onions, ginger and garlic, stirring often.

2. Once soft, add all spices, stirring constantly until very fragrant and mustard seeds start popping 

3. Add remaining ingredients and simmer on low for a few hours.
