Veggie Casserole
Veggie - Precook each of the veggies in the microwave and drain well in a colander. Mix them all together into the sauce, cover with french onion crisps, buttered bread crumbs or crushed chips.
sauce - Saute a chopped onion in a little butter or olive oil - add 1 tsp curry powder and cook with onions (if you want it). When cooked, add mushroom soup, 1/2 cup mayo, pepper, dash of lemon juice (just a bit) and some grated cheese. Bake about 1/2 hour at 350 or until bubbly and golden
